WThis is an easy version of a cocktail found on our latest menu. It's a large-volume premix that is loaded with tastes of the Christmas time, which makes it ideal for hosting a celebration. Save the extra cordial to use in morning drinks, desserts, or to mix another batch of this cocktail.
Bikini Recipe
Makes enough for 10 people
To make the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar
For the Premix (makes 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Citrus Syrup: Place the listed ingredients into a pot, heat until it reaches a simmer, agitating to dissolve. Then, turn off the burner allowing it to cool fully. Decant to a clean bottle, close it and store chilled, where it will keep for around one month.
To make Batch Mix: Combine every liquid ingredients in a large bottle, leave to sit for an hour, then filter it preferably using muslin, to ensure it's fully clarified.
To serve: Add 85ml from the batch mix into a stirring glass filled with ice, and stir carefully for one minute until cold. Strain to a frosted cocktail glass or a similar vessel, garnish with the cranberries adding the final touch by giving it a light spray of mandarin oil over the top.
